Start From Scratch: The Sweetest Last Class with Karine Moulin
Oh it is very bittersweet. Just this past Tuesday I have finished up a 10 week program with a group of amazing individuals in Calgary called Start From Scratch. It is ran by Dan Clapson and Vincci T, a class which teaches post secondary students how to make simple, delicious meals from scratch. The curriculum is versatile and really gives a good idea of how important and easy it is to cook once you get some of the most basic techniques down in the kitchen. ( Which for me... it was dicing onions, you can see what I mean here on a BT morning cook off with some classmates where we made an amazing risotto.)
Now here let me share with you the sweetest moments of my last class with our featured chef Karine Moulin, a recent competitor on Top Chef Canada, she has worked in Hyatt Regency, St. Germain, Palliser Hotel and presently the pastry chef at Hotel Arts Group in downtown Calgary. She was incredibly down to earth and very patient with our class, it was an absolute pleasure in meeting her!
Chocolate & Peanut butter Souffle
For complimenting our souffles, Karine and Dan taught us how to create the perfect creamy salted caramel from using a 'dry' technique in melting down the sugar until it melts beautifully like the photo below from left to right. And some berry sauces and a summery meyer lemon curd.
