Kerry Bennet (@iamkerrybennett) owner/baker of Gluten Free Care Bakery,
Paul McGreevy (@Chefmcgreevy) executive chef at CRAFT and
Dilan Draper (@Drape_Sauce) executive chef at AVEC Bistro
Along with many alumni's from this 10 week program
(ie: Me! From the most recent Winter 2014 class)
Below is what got cooking this past Tuesday for those of you who wasn't there!
A full 3 course gluten free meal! Bon appetite!
Below are 3/4 wines present for the evening, a wonderful feature of rose wines. I especially enjoyed the bubbly Cremant de Bourgogne - Brut Rose!
AMUSE: Dan taught me how to make these cute little Roasted Carrot Gazpacho Shots! It was topped with a hand whipped cream with bits of dill, a healthy... pleasant start to a great meal!
Look at all this seafood!
ONE: Chef Dilan's appetizer included Scallops + Side Stripe Prawns
with tomato citrus consomme, on a thai basil honey!
TWO: The juicy entree of the evening was done by Chef Paul a Bone in Pork Chop with Sweet potato puree, grilled scallions, pan jus, pickled apple.
(So so so good! tip: pan sear to seal the juices,
afterwards place in oven for amazing flavour and tenderness!)
THREE: Dessert was created by baker, Kerry! It was a Shortcake with cognac macerated strawberry rhubarb, basil sugar, lemon curd and frozen whip. (This was so heavenly! We learned how to make something similar in class, and its hard to believe something this amazingly good can be gluten free!)
BTS: here we have some of the craziness behind the scenes in the kitchen! Prep started at 2pm and dinner began at 6:30pm! I've gained a whole new level of appreciation for those who do this full time - all the time! It's so hot in the kitchen when everything is fired up!
Start from Scratch:
Began in 2010, it is a 10 week program which focuses on educating post-secondary students how to cook quality meals with a reasonable budget all from scratch! The course covers how to make pasta sauces from scratch, basic baking, cutting techniques, how to cook different types of meats, snacks and even gluten free items! I had an absolute blast during the class taught and created by Dan! With other instructors such as Vinnci Tsui a local registered dietitian/foodie and a handful of other guest chef's!
